A friend brought some of these to a party recently. They were a big hit.
Likewise when I brought them to bridge last month.
Now I have a Halloween party to go to, and guess what I'm bringing.
The thing is, the minute Beth said the recipe was from Paula Deen, I knew this wasn't Cooking Light. So they have to be good enought that they get all eaten up, or at least taken home by guests at the end of the evening.
They were. They're delicious.
Crust:
1/2 cup (1 stick) melted butter
1 egg
1 box yellow cake mix (18.25 oz.)
Mix together and spread in 8.5" X 11" pan. I couldn't find one that size, so I split it into two smaller casseroles.
Topping:
8 oz. cream cheese at room temperature
3 eggs
1 tsp. vanilla
16 oz powdered sugar
1/2 cup melted butter
1 can pumpkin
1 tsp. cinnamon
1 tsp. nutmeg
Mix pumpkin and cream cheese until smooth. Add eggs. Add other ingredients and mix well. Pour over the crust mix. Bake 40-50 minutes at 350 degrees. Center should still be soft when done.
Cool, cut into squares or triangles. Serve.
