This week's Carnival of the Recipes theme is crock pot recipes. Boy, I haven't used my crock pot in years. Maybe some of these recipes will inspire me to start using it again.
Pulled pork is pork that is cooked so tender that it pulls apart into long strings. It is usually made with either a vinegar-based or tomato-based barbecue sauce (you can make your own or use a bottled favorite). While the best cuts of pork seem to be boneless Boston butt or shoulder cuts which have more fat, but just about any type of pork roast will do.
Some recipes call for simmering the pork in salted water and onion, others cook it in the sauce the whole time. I prefer the former as it keeps the pork from being totally dominated by the sauce. Some folks even marinate it overnight in the sauce. I also like to brown the roast before putting it in the slow cooker. I can't think of many dishes that aren't improved by the flavor of some browning.
Serve the pork on large toasted buns, top the pork with creamy coleslaw as well, if you really want to make a mess. Wear an apron or bib to eat.
One 3-4 pound boneless pork shoulder, seasoned with salt and pepper, and browned in oil.
Place a sliced onion in the bottom of the crock pot and top with roast. Top with more onion slices, then add water to cover.
Simmer for 6-8 hours on low. It is hard to overcook this dish, as the aim is to make it as tender as possible. When tender, remove roast to a cutting board and allow to cool so it can be handled.
Meanwhile, drain the crock pot, and add your favorite sauce (about 2 cups) and one chopped onion. If you prefer to make your own sauce, try this one.
When the roast is cooled, pull pork apart with your fingers, discarding any obvious fat. You may choose to chop it up once pulled apart to make it easier to eat. Return it to the pot, and cook an additional 3-6 hours.
You can cook it on higher heat and reduced the cooking time. Once it is cooking in the sauce, check periodically and add a small amount of water if it looks like it is too thick (you can also add 1/2 cup to the sauce when you first put it in).
Serve with cole slaw and dill pickle. Pile it on a bun and dig in.

These recipes are amazing but at the same time I think these recipes are a little bit unhealthy, I think it would be perfect if they were combined with something else.m10m
